Lemon Cupcakes




Prep time: 15 minutes
Cooking time: 20 minutes

Ingredients:
100g Butter
100g Self-raising Flour
100g Caster Sugar
175g Icing Sugar
2 Eggs
1 Lemon
1/4 tsp Baking Powder

1. Preheat the oven at 180°C
2. Mix the butter, sugar and 3/4 of the lemon zest until it starts to become smooth
3. Add the eggs
4. Fold the flour and baking powder in slowly, until light, fluffy and smooth
5. Pour evenly into cupcake cases. I only made about 8 cakes out of this mixture, but the cases I used were slightly larger than normal.
6. Bake for 15-20 minutes until fully risen and golden
7. When the cakes have cooled, mix together the icing sugar with the juice from the lemon (or from a squeezy bottle if preferred) use a small amount of hot water to loosen the mixture if needed, but the icing should be quite firm anyway
8. Ice the cakes and decorate
