The New Eggs Florentine





Cooking Time: 10 minutes
Serves 4

Ingredients:
250g Spinach
15g Butter
4 Eggs
1 Nutmeg, grated

1. Heat the butter in a frying pan over a low heat
2. Add the spinach and toss so it's all coated in butter, then place a lid over it
3. After the spinach has been allowed to wilt a little, crack the eggs into each corner of the pan and replace the lid
4. Now is a good time to grate your nutmeg. I know it sounds weird but it really works well!
5. Keep an eye on the eggs, after about 5 minutes they should be cooked
6. Slice the the spinach into four so each egg is sat on an equal bed of it and plate up
7. Add the nutmeg and any other seasoning
